Ingredients for Chicken Vegetable Soup, a Diet Soup Recipe

2 chicken breasts (skin & visible fat removed - we used bagged, frozen chicken breast)
1/4 cup of Chopped Onions, any variety

1 teaspoon of parsley (dried or fresh)
3-4 potatoes (Idaho; of medium size - peeled, washed and cut into chunks)
1/2 bag of fresh carrots (peeled, washed and cut into chunks)
Chicken Broth - 1 large container
Salt & Pepper to suit personal taste

Directions for Preparing Vegetable chicken soup diet

Use a 2 quart, deep pot to prepare soup. Boil chicken with onions in the pot; remove when chicken is thoroughly cooked (and it should cook very quickly). Add just enough water to cover chicken.

Cut chicken into cubes but do not return to the pot just yet.

Add carrots to pot and cook on high for about 7 minutes, then add the potatoes. Add a bit more water to the pot if needed - just enough to cook the carrots and potatoes with.

Continue to cook until potatoes are tender, but not mushy. Add chicken to the pot. Add chicken bullion and parsley and bring to a boil.

Both beautiful and delicious - low in fat, low in calories, a dieter's delight.
