Ingredients 11/2 Cups parboiled rice 1 cup black gram dhal 1/2 teaspoon asafoetida powder 1 teaspoon crushed peppercorns 11/2 teaspoons crushed dry ginger 1 teaspoon cumin seeds A few curry leaves Salt to taste Method Soak the parboiled rice and black gram dhal in water for a couple of hours. Grind the rice and black gram dhal to a coarse batter. Add the asafoetida powder, crushed pepercorns, giner, cumin seeds and salt and allow to ferment for twenty-four hours. The batter should become sour. Just before making the idlis, heat the pan and add the cury leaves. Remove from the heat, mix well with the idli batter. Smear water in a pan.
